I'm probably the last person in the world who would order buffalo wings at a bar or restaurant but ... that sauce is quite good, isn't it? Here we have it on roasted cauliflower and veggies, and use that to top a tasty grain bowl.
Feel free to use what grain you love. Feel free to use different beans. Feel free to add greens under the grain if you want, or extra crunch bits like celery. The great part about a bowl meal is that you can customize what is in your bowl and eat your favoirte.
Buffalo Cauliflower Grain Bowl
Yield: 4 servings
Ingredients
5 cups fresh cauliflower florets, trimmed into bite size pieces
1 cup carrots, sliced
2 (15-ounce) can chickpeas or cannellini beans, rinsed and patted dry
4 tablespoons extra-virgin olive oil, divided
salt and pepper
4 tablespoons Buffalo-style or Frank's hot sauce
For sauce:
½ cup whole-milk plain strained (Greek-style) yogurt
2 tablespoons water
1 tablespoon lemon juice
garlic clove, minced
1/2 cup chopped herbs (such as parsley, chives, cilantro, dill)
¼ teaspoon garlic powder
For serving:
3 - 4 cups cooked grain (such as farro, rice, quinoa or your favorite)
2 cucumbers, split lengthwise into 4 strips and cut into 1/2-inch bites
1 avocado, sliced
Directions
Preheat oven to 475°F. Line a large rimmed baking sheet with foil or parchment paper. Drizzle lightly with oil; set aside.
Add cauliflower, carrots, and beans to a large bowl. Drizzle with 3 T oil and season with salt and pepper; toss until evenly coated. Spread in a single layer on the prepared baking sheet. Roast, undisturbed, until the cauliflower is tender and the chickpeas are starting to crisp, 20 - 25 minutes.
Remove the pan from the oven. Drizzle the veggies with 4 tablespoons hot sauce; toss until evenly coated. Spread in a single layer on the baking sheet. Roast, undisturbed, until slightly crisp and browned, about 10 - 15 minutes.
Meanwhile, whisk ½ cup yogurt, water, lemon juice, garlic, and chopped herbs until smooth and creamy.
For serving: scoop grain into your bowl, top with the roasted veggies, some cucumber bites, avocado and drizzle the top with sauce.
